Beef fillet marinated with Herbs


Ingridients:
  • Beef fillet 400gr
  • Salt 1,5kg
  • Brown sugar 100gr
  • White sugar 100gr
  • Lemon juice of ½ lemon
  • Thyme, majoram, parsley,sage, rosemary, tarragon, mix salad
  • Extra Virgin olive oil


Process:
  1. Eliminate the fat from the fillet.
  2. Chop herbs.
  3. Mix all sugar and ½ of sugar with salt.
  4. Cover the meat with herbs and put into frige for 24-36 hours.


After 24-36 hours:
  1. Remove fillet from the mixture, wash quickly in cold water, dry it on the paper.
  2. Brush the meat with a little bit of olive oil and pass in the patr of herbs which we have saved.
  3. Serve the fillet cutted into small slices, season with a sause of olive oil and lemon juice. Garnish with any kind of salad.

Our Chef always repeats the same words: «Garnish is up to you! Do as you want! It's up to you» J
