 Ingridients:
  • Biga
  • Strong flour “00” 1kg
  • Water 500gr
  • Yeast 20-25gr
    1. Mix the ingredients in the chariot and put to rise for 8 hours.
    2. Mix all ingridients in the dipping mixture of 2* with the cart.
    3. Let double in size, cut in pieces 500gr., given an elongated shape, flour and let rise in rates rising to 35C.
    4. When the loaves have doubled their volume bake in preheated oven at 245C-255C for 35-40 min.
