- Biga
- Strong flour “00” 1kg
- Water 500gr
- Yeast 20-25gr
- Mix the ingredients in the chariot and put to rise for 8 hours.
- Mix all ingridients in the dipping mixture of 2* with the cart.
- Let double in size, cut in pieces 500gr., given an elongated shape, flour and let rise in rates rising to 35C.
- When the loaves have doubled their volume bake in preheated oven at 245C-255C for 35-40 min.
