Sicilian Sfincione




Here's one more recepie of wonderful italian bread ) Try it, I have made step-by-step instructions. Have a bite!



Ingredients for the BASE:
  • Durum wheat flour (or plain flour) 1kg
  • Hot water 500-550gr
  • Grated cheese 100gr
  • Extra virgin Olive oil (better Sicilian) 50gr
  • Yeast 20-40 gr
  • Black pepper 5gr
  • Salt 20gr


Ingredients for the TOPPING:
  • Tomato sause 600gr
  • Stale bread 300gr
  • Cheese 250gr
  • White onion 150gr
  • Anchovies 150gr
  • Olive oil q.b.
  • Cheese 50gr
  • Parsley q.b.
  • Oregano


  1. Dissolve the yeast in a warm water (not more than 36C).
  2. Mix the flour with cheese, pepper and salt, gradually add hot water, oil and finally the yeast diluted, knead for 20min until dough is smooth and soft.
  3. Form a ball, affecting the cross and put it in a covered bowl and let rise for 45-60min.
  4. Scrape ad bone anchovies.
  5. In a saucepan heat a little oil anf fry over low heat, the onion, add 1/3 of anchovy and parsley, cook, add the tomato sause and oregano. Cook over low heat for 15 min..
  6. Cut the cheese squares.
  7. Oil of black breadcrumbs pans with straight sides and top.
  8. In a pan, toast the bread with a little grated oil.
  9. Divide the dough into pieces suitable for cooking pans, lower them with a rolling pin and place in oiled pans pressed lightly with your fingers. Season with a little olive oil and apply with your fingers on the surface of deep holes, up to the bottom of the pan.
  10. Let rise for about an hour.
  11. Cover the surface of the dough with the sause, scatter, the chopped anchovy filets and cheese, sprinkle with grated cheese, cover with toasted bread and finish with a little olive oil.
  12. Bake at 200C for 20-30min.
