Fried Anchovies with Bagnett Vert

Starter? One more. Fried ...



Ingredients:
  • Fresh anchovies n. 16
  • Parsley 75gr
  • Bread crumbs 15gr
  • Extra virgin olive oil 60gr
  • Garlic 5gr
  • Long dried chillies 2gr
  • Red wine vinegar 15gr
  • Salt q.b.
  • Anchovies 15gr (for the filling)
  • Pickled cucumbers 10gr
  • Eggs n. 2
  • Flour q.b
  • Bread crumbs q.b
  • Extra virgin olive oil q.b (for frying)


 Procedure:
  1. Chop the bread, let it soak in vinegar.
  2. Soak anchovies in cold water.
Clean the parsley and garlic, threaded and wash the anchovies.
Squeeze the bread and place all ingredients in a blender, mix them until a smooth thick sauce.
Put the sauce in a container and add the salt.
Clean fresh anchovies, open them like a book, make sure that the threads are attached.
  3. Spread a little of green sauce over the meat and half shut with the other half of the thread. Proceed with all the anchovies.
  4. Make floured, dipped in beaten egg and then in bread crumbs all the anchovies.
Fry in a plenty of olive oil, place on paper towels, salt and serve immediately.
