Salmon marinated with Herbs







Ingridients:
  • Fresh salmon 600gr
  • Salt 500gr
  • Parsley 150gr
  • Dill 40gr
  • Chives 40gr
  • One Lemon
  • Besclun, berries, olive oil, the wholemeal bread – q.b.


Process:
  1. Make a fish fillet and remouve all bones.
  2. Chop herbs.
  3. Put plenty of salt in a bowl. Put salmon fillet. Cover with remained chopped herbs and salt.
  4. Let it marinate for 15 hours.


After 15 hours:
  1. Remouve the fillet with salt.
  2. Cut  the bread into thin slices and tost on a pan with a little of olive oil.
  3. Squeeze the lemon, add salt and pepper into the juice. Add slowly olive oil until you'll get a thick sause. (Better blend it all)
  4. Thinly sliced salmon serve with salan and red berries, Put on a plate some toasted bread>
  5. Season with a bit of lemon sause.
