Ingridients:
- Fresh salmon 600gr
- Salt 500gr
- Parsley 150gr
- Dill 40gr
- Chives 40gr
- One Lemon
- Besclun, berries, olive oil, the wholemeal bread – q.b.
Process:
- Make a fish fillet and remouve all bones.
- Chop herbs.
- Put plenty of salt in a bowl. Put salmon fillet. Cover with remained chopped herbs and salt.
- Let it marinate for 15 hours.
After 15 hours:
- Remouve the fillet with salt.
- Cut the bread into thin slices and tost on a pan with a little of olive oil.
- Squeeze the lemon, add salt and pepper into the juice. Add slowly olive oil until you'll get a thick sause. (Better blend it all)
- Thinly sliced salmon serve with salan and red berries, Put on a plate some toasted bread>
- Season with a bit of lemon sause.
